June 2016 – ARTFUL AL FRESCO DINING When Lawrence Colburn got off the train in Geneva he knew this was the paradisiacal place to open his European inspired café and wine bar. Colburn shared with us, “you can feel the heartbeat on the Fox”. A former sommelier at fine dining restaurants in Chicago with a love for art Colburn, opened Preservation Bread and Wine on June 19, 2010. His desire to educate and share his passion about European wines and cheeses can be heard as he visits each table. Colburn takes pride in all he does from greeting each guest at the door to using only seasonal and locally sourced ingredients. The aromas that extrude from this divine café can be smelled down the street. The meats, turkey and pastrami are roasted in house while the Amish chicken is locally raised. The bread is baked fresh daily for the cold and warm sandwiches. It’s all the attention to detail and the not only beautiful but delicious food that will keep you wanting more.

Now that the weather is warming Preservation Bread and Wine is a wonderful intimate cafe to dine alfresco. This quaint outdoor patio is located away from the pedestrians on the busy 3rd street. Surrounded by hanging greens and flowers grab an artisan cheese and charcuterie plate, a savory bite and a glass of wine, sit back and relax. With at least 18 imported cheeses and an extensive wine menu the only problem you may have is making a decision! We always ask for a recommendation and about any upcoming “secret” events.

Each small plate is best shared and with so many favorites on the menu you will want to try it all. The almost too beautiful to eat sobrasada crostini is topped with fresh honey and edible flowers. The bacon jam costini is topped with blue cheese arugula and makes for a perfect combination of sweet, salty, crunchy and creamy. The salad we always go back to is the butter lettuce with tangy citrus and sweet candied walnuts. The baguette serrano ham and salchichon with queso tetilla and olives sandwich is a new favorite. Warm sandwiches are unique but each equally delicious. The dill rye bread pastrami, focaccia lamb meatloaf, brioche grilled cheese and grilled sourdough smoked turkey will comfort your soul while tantalizing your palate. The savory bite casseroles are the epitome of comfort food. Feed your spirit while soaking in the sunshine!
